But listen, she is a techie sort of cook. Broccoli Salad 1 bunch broccoli, cut into bite-sized pieces 1/3 cup raisins 1/2 cup chopped green onions 8 ounces crisp crumbled bacon 1 can water chestnuts, chopped Dressing: 1 cup mayonnaise 1/3 cup sugar 1 tablespoon vinegar Reader Maribeth L. sends this broccoli salad recipe, which she says is “quick chop and stir,” along with the next one for: Summer Crab Salad 16 crackers, crumbled 1 can shrimp (optional) small amount of chopped onion (to taste) small amount of Mayonnaise (to moisten) 1 can crab meat 1/2 cup celery 6 hard cooked eggs Maribeth writes that if you use the canned shrimp, be sure to wash and drain before combining other ingredients. She adds: “This recipe is good as a salad, but may also be used as sandwich filling or as an appetizer with crackers.” Easy Summer Beef Casserole 1 pound ground beef 1 small onion, diced 1 can cream style corn 1 large Idaho potato, sliced into 1/4 inch slices 1 can tomato soup Another Mary, this one raised in the South but living now “up yonder,” shares this recipe which she thinks was first concocted by her mama when there was nothing but leftovers in the fridge. She says this is what you do with the ingredients above: “Brown ground beef and onions together. Into a buttered baking dish, put sliced potatoes on bottom, sprinkle with salt and pepper and about 2 Tbl flour. Add a can of cream style corn, salt and pepper, and flour. To this, add beef and onions. Be sure to drain excess grease. Finally, add tomato soup, spreading with spatula to cover entire top. Cover and bake at 350 degrees for an hour.” Catfish Parmesan 1 egg (beaten) 1/4 cup milk 2 pounds catfish fillets 1 stick butter, melted 1/4 cup flour 3/4 cup Parmesan cheese 1 tsp salt 1 tsp pepper 1 tsp parsley flakes Anne B. sends this one. Yum! Her instructions say: “Dip the fish in the egg mixture, then in the flour mixture. Place the fish in a lightly greased glass baking dish. Pour butter over the fish and bake 45 minutes at 400 degrees.” Uh, and this feeds ONE, right? Vivian’s Mayo Biscuits 2 cups self-rising flour 1 cup milk 4 tablespoons mayonnaise Vivian swears this recipe may be easy-sneezy, but it’s foolproof, and oh, so southern. She says you just mix this up and pour the batter into an iron skillet, baking at 425 degrees until done. If you don’t have an iron skillet (shame!), you can spoon the mixture into a muffin pan and cook at the same temperature. Better yet, send us your favorite!
